Cajun-Style Red Beans and Rice

This is a hearty Southern dish, easy to make and full of flavor and quite spicy! I sometimes add in cooked ground beef, you can add in some chopped cooked bacon or use spicy dryed smoked sausage to the beans for smokey flavor --- I also like to add in some Creole seasoning -- see my The Best Creole/Cajun Seasoning Mix

  1. Heat oil in a large skillet over medium heat.
  2. Add in onions, garlic green bell pepper and crushed chili flakes; saute until veggies are soft (about 8 minutes).
  3. Sprinkle with chili powder and paprika, cook about 1 minute.
  4. Add in tomato sauce, stewed tomatoes and hot sauce (if using) season with salt and add in sugar to taste if needed.
  5. Add in beans, cooked ground beef and bacon if using; mix to combine and simmer for about 1 hour.
  6. Serve mixed or over rice topped with a dollup of sour cream if desired.

Really liked this. We used the bacon, which I know should be sausage to keep authentic but I wasn't going for authentic. Which explains why I also used black beans. This didn't take much time/effort and uses staple items, so we'll make this often. Thanks for posting!

LOVED THIS!!! So easy and so flavorful! I added mushrooms (just for a few extra veggies) & a diced jalape?o (because we love spicy food) - but other than that wouldn't change a thing! For the meat we used turkey sausage, and it complimented the dish perfectly. Thanks for the great dish, Kitten!

I've been meaning to review this for a while; it is so delicious! Also, versatile! I've used bacon, ground sausage, smoked sausage and/or chicken chunks for this, all with great outcomes. My favorite combination is chicken chunks and mild smoked sausage (this previous time, I used these and black beans). I always half this recipe though (still using 1 whole can of stewed tomatoes, yum!), and still have enough for seconds and leftovers. The family always raves about my dishes, TY Kittencal!
