Made this for ZWT III and really enjoyed it. I didn't actually use it as a rub, I used it in Creole Buffalo Shrimp by chef #47510 and it worked really well. Since I don't eat pork or chicken I will probably use the recipe as my standard Cajun spice. Thanks a lot for posting, it was a lot easier and less expensive than going to the store and paying for a pre-mixed jar of cajun spice.
This was an amazing rub. I used it on a flattened chicken on the BBQ. I put the rub under the skin so it could flavor the meat. Will be making again.
Charlotte J. What a winner. I have not yet used the mix on chicken or pork. I have used it on potatoes, mashed potatoes, steak. (I cooked the potatoes, sliced them 1" thick, put on the rub and warmed them up on the BBQ.) I put the mix in small spice jars then gave them to friends as gifts.
