This soup is a staple in this house.......its fast, really tasty and almost healthy. The recipe came from a cooking light magazine.
- 4 cups 1% low-fat milk
- 2 cups diced peeled baking potatoes
- 1 teaspoon cajun seasoning
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 cans cream-style corn
- 1 lb large shrimp
- Combine the first 5 ingredients in a dutch oven& bring to a boil.
- Add corn and simmer for 15 minutes.
- Add shrimp and cook for 3 more minutes.
