I got this recipe from my Mom's friend Pat du Plant, who lives in Beaumont, Texas. This dish can be really be spiced up by adding cajun seasoning.
- 2 cans French onion soup
- 2 cans beef consomme
- 2 cups rice
- 1 lb smoked sausage, sliced into 1/2 inch rounds (spicy "or" regular)
- 1 large onion, chopped
- 1 green pepper, chopped
- Mix all the ingredients together and place in a 12"x9" pan.
- Cover and bake at 350ºF for 30 minutes.
- Uncover and bake 15 minutes more.
I really liked this recipe. I added some baby carrots just because I needed a vegetable and was too lazy to cook them seperately! Really easy one dish dinner.
This recipe worked, the rice absorbed the liquids perfectly, it wasn't overwhelmingly onions, and the flavors were mild and pleasant. However, it's a starch lovers dream. This recipe can be renamed: Too Much Rice With Little Else. This unbalanced dish has potential of greatness.
