Super, yummy, spicy, Cajun potatoes. ^.^ There will be extra spice mix than what is called for in the recipe, you can use it for other recipes or even as a rub on meats.

  1. -Cajun Spice Mix----Combine spices thoroughly and store in a closed jar, and put in a cool dry place for later use.
  2. Preheat over to 375* F.
  3. Place potatoes in large bowl and toss with oil.
  4. Mix ALL seasonings in small bowl. Then pour on potatoes, toss to coat thoroughly.
  5. Transfer potatoes into a well oiled baking dish and bake for 45minutes to 1hr.
  6. Stir occasionally.
  7. Serve immediately.
  8. Enjoy.

Loved these! The Cajun spice is so darn good. Glad I have some extra to use in the future. The potatoes came out tender and crispy. Just the way we like them. I think the recipe has been mortified to the reviews because the spice was not over whelming at all. I did decrease the salt but only by a tiny bit. (personal preference). This will be made again. Thanks for posting. :) Made for Spring PAC 2011.

I made these potatoes last night and they were so good. My husband thought there was too much seasoning but I LOVED them. They had a nice kick and were crispy on the outside and soft on the inside! Wonderful recipe, thank you so much!

Very good recipe. I made the chunks smaller because I wanted them done quicker than the ask for hour. I personally found the cayenne to strong and would back off on it next time but that is just personal taste. The spice mix makes a lot more than I needed on 2 spuds. I used 2 TBSP of it and got a good coating. I used the extra as a rub for the pork roast that the potato's accompanied.
