      This is an excellent recipe. I loved the flavors of everything once it was together. I had to sub ham for the sausage and I didn't have any parsley. I also made a small batch to be sure my husband would like it and he DID. I was so glad! I will definitely be making this again! Thanks for a great change to regular potato salad.

      This is one of my favorite summertime recipes! Every time I've made it people have gone absolutely crazy for it! Unlike the previous review, I will sometime add extra sausage to the salad, because who doesn't like extra in a dish like this? Also, I'm not a huge spicy food fan so sometimes when I make it I cut back on the amount of cayenne but that's just my personal preference. This salad is extremely easy, quite different from a typical potato salad and it makes a really great side dish for some boneless pork ribs. Thank you so much for posting it!

      I prepared this to serve alongside steaks and grilled shrimp. We enjoyed this potato salad very much. The only change I made was to use about half the amount of sausage as that was all I had. I honestly don't think this hurt the flavor of the salad. It had a wonderful flavor and I really enjoyed the subtle heat of the cayenne. Thanks for sharing the recipe!
