This is an excellent recipe. I loved the flavors of everything once it was together. I had to sub ham for the sausage and I didn't have any parsley. I also made a small batch to be sure my husband would like it and he DID. I was so glad! I will definitely be making this again! Thanks for a great change to regular potato salad.people found this review Helpful. You can only vote others' reviews helpful or not helpful... Was this review helpful to you? This is one of my favorite summertime recipes! Every time I've made it people have gone absolutely crazy for it! Unlike the previous review, I will sometime add extra sausage to the salad, because who doesn't like extra in a dish like this? Also, I'm not a huge spicy food fan so sometimes when I make it I cut back on the amount of cayenne but that's just my personal preference. This salad is extremely easy, quite different from a typical potato salad and it makes a really great side dish for some boneless pork ribs. I prepared this to serve alongside steaks and grilled shrimp. We enjoyed this potato salad very much. The only change I made was to use about half the amount of sausage as that was all I had. I honestly don't think this hurt the flavor of the salad. It had a wonderful flavor and I really enjoyed the subtle heat of the cayenne.
