This is one of the old country recipes from the Cajun heritage. Frances Thibodeaux from Scott, La. has used this recipe for many years. I love it because it reminds me of the berry picking days of my youth. The reward was a homemade cobbler with the fruit we had picked that day. I have looked for many years to find THIS recipe. It taste like the cobblers of my childhood days. My search is over and this one is in my favorite file. During the baking process, the batter rolls over and you end up with a sugar glazed crust. - 1 (21 ounce) can pie filling
- 1⁄2 cup margarine (melted) or 1⁄2 cup butter (melted)
- 1 cup plain flour
- 1 cup granulated sugar
- 2⁄3 cup milk (regular)
- 1 tablespoon baking powder
- 1 pinch salt
- Mix in a large bowl the melted margarine or butter, flour, sugar, milk, baking powder and salt.
- Mix all these ingredients and then pour the batter in a margarine greased 9x9 pan.
- Stir the fruit in the can well before use.
- Using a large tablespoon, add the fruit of choice by the spoon and drop method. Use the whole can.
- Bake 1 hour at 350 degrees.
