Cajun Fries With Dipping Sauce

"Spicy and delicious! I usually add more green onions to the dipping sauce. You can doctor it up to your tastes."

ingredients

• Fries

• 2 lbs white potatoes, cut into wedges
• 1 teaspoon salt
• 1⁄2 teaspoon ground black pepper
• 1 1⁄2 tablespoons cajun seasoning or 1 1/2 tablespoons creole seasoning

• Dipping Sauce

• 1 (8 ounce) container low-fat sour cream
• 1 green onion, chopped
• 1 tablespoon red wine vinegar
• 1⁄2 teaspoon ground black pepper

directions

1. Heat oven to 425º.
2. Place first 4 ingredients in a ziplock bag. Seal and shake to coat potatoes.
3. Place potatoes on a baking sheet covered with cooking spray.
4. Bake 30 minutes or until tender and golden brown.
5. Dressing ~ Combine remaining ingredients and serve with fries.

I made these on the grill, which was an easy way to do them and they turned out very well. The sour cream was a good way to temper my very spicy cajun seasoning.
