Cajun Chicken-Sausage Pasta

- 170.09 g package grilled chicken breast strips
- 4.92 ml cajun seasoning
- 198.44 g low-fat smoked sausage, sliced (Healthy Choice)
- 236.59 ml fresh mushrooms
- 177.44 ml onion (cut in slivers)
- 177.44 ml green bell pepper (cut in strips)
- 411.06 g can diced tomatoes with jalapenos (Del Monte Zesty)
- 226.79 g fettuccine pasta (cooked will equal 4 cups)
- fresh ground black pepper
directions
- Sprinkle chicken strips with cajun seasoning and cook over medium heat for 3-5 minutes in skillet sprayed with cooking spray.
- Remove chicken and set aside. Add sausage, mushrooms, onions, and bell peppers to pan and saute for about 5 minutes or until veggies are tender.
- Stir in chicken strips and tomatoes and cook until heated through.
- Add pasta and toss well.
- Sprinkle with fresh ground pepper.

This has become a staple in our house but it is extremely spicy. I love spicy food but this was spicy even though I used the tomatoes with chilies as another reviewer suggested. I believe it is the cajun seasoning that gives it the kick. Still amazing taste and we can't get enough of it even though our mouths are burning! ;)

This was a really good, quick weeknight meal. I love spicy food, but this was fire-alarm HOT! I didn't even use the jalapeno diced tomatoes, but had the green chile and tomatoes instead. I wanted to make this as healthy as possible, so I subbed whole wheat rotini for the fettucini and used turkey polska kielbasa. I definitely got my water down today! :) Thanks Texaspollock.
