The cajun seasoning and spinach are a great combination, and the recipe is super easy to prepare. Next time, I think I will grill the chicken and substitute half and half for the milk, increasing the amount to 2 1/2 cups. Other types of pasta could be used, despending on what is in your pantry - farfalle or orzo would be good, too. Thanks for a great recipe!

  1. Put noodles on to boil, and boil according to package directions.
  2. In the meantime, make sauce.
  3. In a medium sauce pan, melt butter.
  4. Add flour and blend well.
  5. Gradually whisk in milk, spinach, cheese, garlic powder, salt and pepper.
  6. Cook over medium heat until thickened, stirring frequently.
  7. Cover and reserve.
  8. Heat oil over medium high heat in large fry pan.
  9. Sprinkle chicken liberally with cajun seasoning, and sear chicken on both sides, reduce heat to medium and cook thoroughly (about 10-15 minutes), turning occasionally.
  10. Serve noodles on plate, top with a chicken breast and spoon sauce over.
  11. Garnish with freshly chopped parsley and extra parmesan cheese if desired.
