Cafe Yk's New England Style Clam Chowder

ingredients
- 12 pieces bacon, chopped
- 1 medium onion, diced
- 1 (51 ounce) can chopped clams with juice, juice reserved
- 2 potatoes, cubed 2
- 4 celery ribs, diced
- 1 cup heavy cream
- 2 cups low-fat milk
- 1 teaspoon Old Bay Seasoning, seasoning
- 2 tablespoons clam base
- instant mashed potatoes, as needed for thickening
directions
- Add bacon to sauce pan and cook on medium low heat until crispy.
- Add onion and cook until translucent.
- Add Celary and continue cooking until soft.
- Add clam juice and potatoes.
- cover and cook until potatoes are tender, stiring occasionally
- Add clams, clam base, old bay, cream, and milk
- Stir together.
- Cook for about 30-45 minutes.
- Stir occasionally.
- whisk in instant mashed potatoes as needed for thickening.
- adjust seasoning with salt & pepper as needed.
