A creamy slightly spicy tomatillo dressing. I have no idea if this is the the exact recipe, but it is real good! When I made it though, I halved the recipe and substituted a medium salsa verde for the tomatillos and jalapeno (used 1/2 cup for half of the recipe). So good!
- 2 cups mayonnaise
- 2 cups sour cream
- 10 sprigs cilantro
- 3 tomatillos, chopped
- 2 green onions (I used a little red onion)
- 2 garlic cloves
- 1 jalapeno pepper (seeds and all)
- 1 lime, juice of
- 1 -2 teaspoon salt
- Place all ingredients in blender and blend until smooth.
- Dressing last 2 weeks in frig.
Oh - my - heck. I could drink this from a cup. SO good. I added about a cup of buttermilk to make it a little more liquid, and it was the hit of the party. Thank you!
I really enjoyed this dressing. I added extra tomatillo's and cilantro. Zesty and fresh. Great on a taco salad
This is a great copy cat of Cafe Rio's tomatillo's salad dressing. I know this. It has been almost two years since I was in their highest volume store in Salt Lake. Coming soon I can let the cat out of the bag. You know signed contracts and things. Cafe Rio thinks after many years of working there that I would forget the recipes
