Café Royale
"From "650 Cocktails and Mixed Drinks". Used as a digestif this is considered somewhat ostentatious. Makes four after-dinner drinks bound to impress your guests...all flaming things do, don't they?"

- 4 sugar cubes
- 1⁄2 pint very hot very strong black coffee
- 6 tablespoons cognac
directions
- Rinse out four coffee cups with boiling water to warm the cups. Pour out. Add a sugar cube to each cup then fill a little below the rim with hot coffee. Float 1 1/2 tbsp cognac on each of the four cups and set aflame. Let flame for a few seconds then extinguish by stirring with a spoon.
