From Rick Bayless book "Rick and Lanie's Excellent Kitchen Adventures". I found the recipe posted on http://contessabare.proboards48.com/
- 1 small garlic clove
- 1⁄2 cup mayonnaise, Hellman's
- 3 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1 tablespoon cold water
- crush garlic into a 2 cup glass jar with a lid.
- Add remaining ingredients.
- Cover and shake well.
This is a fantastic recipe!! I had all of the ingredients on hand and it whisked together in a flash. I did omit the salt, and added a sprinkle of salt and black pepper to the tops of our salads. If you are not fond of a strong lemon flavor, I would cut back a bit on the lemon juice--I used the entire amount and was quite happy with the tartness.
