Caesar Dressing (From Carnival Cruise Lines)

"Great dressing - it makes me look forward to eating salad. This recipe makes a HUGE batch of dressing, but this is hands down the BEST Caesar dressing I've ever eaten. Thankfully Carnival kindly provided the recipe to me upon request. I will be breaking this down into smaller increments to make here at home. I have left measurements as I received them. You'll have to convert them from metric on your own. Or use the exact metric measurements for best results."

  • Place egg yolks in a bowl and mix at high speed until creamy.
  • Add oil slowly while beating and an emulsion starts to form.
  • Continue adding oil in a slow stream until you have all the oil blended in and mixture looks like mayonnaise.
  • Add rest of the ingredients and adjust seasoning to taste.
  • Chill dressing until ready to use.

  1. T- Logan did you happen to ask for the recipe to the kale Salad? I have never in my life had a kale salad as good as the one Carnival serves on their ships!! I am going to make the dressing because it was delicious!!! I am so glad i ran across this. I had googled Kale salad on carnival and i saw this . I have been craving this since i went on my last cruise in 2017.

  1. Trying to make a small batch? I just tried till it worked... to loosen up or spread add a little cream. Makes apprx 2oz 4 sm salads/ 5oz bag of fav. salad mix! -> 1 egg yoke 2 oz vegetable oil, 1 oz shredded parmesan cheese, 3 peeled garlic (1 teaspoon) chop and minced., 1 anchovy chopped (1/2 teaspoon) ½ teaspoon anchovy paste ¼ lemon squeezed juice (1 teaspoon) ¼ teaspoon salt ½ teaspoon whole peppercorns ¼ teaspoon *white vinegar (2 drops) or to taste ? teaspoon Worcestershire sauce (1 drop) or to taste Use 2 teaspoons per salad serving
