Caerphilly wasoriginally a Welsh cheese, but is now made mostly in the West Country. It is a mild soft cheese. Here it is paired with vine-ripened tomatoes and fresh herbs. Pretty and tasty. From "The Great British Kitchen" published by The British Food Trust.

I used beef steak tomatoes from my garden. They're so big that I only needed one tomato to prepare enough for two servings. I also subbed sour cream for the yogurt since I had some in the fridge that needed to be used up. Delicious! Made for ZWT8 Family Picks

  1. Slice cheese (do not worry if it crumbles a bit) and tomatoes; arrange on individual plates.
  2. Whisk together oil, yogurt, mustard, herbs; season with salt and pepper.
  3. Spoon yogurt dressing over cheese and tomatoes; garnish with additional fresh herbs.
