- 6 slices bacon
- 1 tablespoon fresh chives, snipped
- 1 onion, chopped
- 1 tablespoon fresh parsley, chopped
- 1 green pepper, chopped
- 1 teaspoon fresh dill weed
- 2 (16 ounce) cans cream-style corn
- 2 (10 3/4 ounce) cans cream of potato soup
- milk
directions
- Cook the bacon in saucepan until tender.
- Add onion and green pepper; continue to saute until onion is tender.
- Add corn, potato soup and 2 empty soup cans of milk to the bacon mixture.
- Simmer 10 minutes or until smooth.
- Add the herbs just before spooning into bowls.

I am married and have three children ages 9 to 16. I work full-time so between work and attending as many school functions as I can possibly fit in, I have little time to prepare "gourmet" type dishes which require a lot of preparation time. I like tasty, quick-fix meals that use ingredients that are usually in my house and don't require an extra trip to the store. When I'm not waiting on my family or working, I like to do counted cross-stitch and recently started a new hobby----quilting.
