Cabin Corn Chowder

  • Cook the bacon in saucepan until tender.
  • Add onion and green pepper; continue to saute until onion is tender.
  • Add corn, potato soup and 2 empty soup cans of milk to the bacon mixture.
  • Simmer 10 minutes or until smooth.
  • Add the herbs just before spooning into bowls.

  1. Tasty! I drained most of the grease then added the veggies to saute, also added celery but kept green pepper as well, and allowed it to simmer for about 1 1/2 hours to thicken before we ate it. Very good and easy! kassie
     
  2. I cut the bacon in half and drained off most of the bacon fat and the taste of bacon still seemed too intense. I also thought celery was more appropriate than green pepper.

I am married and have three children ages 9 to 16. I work full-time so between work and attending as many school functions as I can possibly fit in, I have little time to prepare "gourmet" type dishes which require a lot of preparation time. I like tasty, quick-fix meals that use ingredients that are usually in my house and don't require an extra trip to the store.
