Inspired by my mom's cabbage rolls, I could never eat the big leaf of cabbage. So I made a casserole instead. Very healthy and my kids even asked for leftovers
- 1 lb turkey sausage
- 6 cups shredded cabbage
- 1 (26 ounce) jar spaghetti sauce
- 1 cup sliced mushrooms (optional)
- 1 cup sliced bell pepper (optional)
- 1 -2 mince garlic clove
- 1 tablespoon italian seasoning
- 1⁄2 cup onion
- Brown turkey sausage in large skillet.
- Add shredded cabbage, mushrooms, peppers, onions, salt, pepper, italian seasoning, and garlic.
- Cook until cabbage will wind around fork.
- Add spahgetti sauce.
- Heat to a simmer.
- Serve hot.
I just made this a few days ago. I did use diced turkey ham sauteed, I did not have turkey sausage because I think my hubby would spot it. He loves turkey lunchmeat and baked turkey only. I used 1/2 cup diced green pepper and followed the recipe as written. Very good. I have to watch the tomato sauces and cheeses because they don't fit the renal diet because of potassium,
but once in a while, yummmm. I use quite a bit of mushrooms. Thanks for posting.
I made a fresher version of this recipe and deviated a bit from it, so it wouldn't be fair to rate this version of the recipe posted. I love the concept of using cabbage in spaghetti though, because it's healthy, you can't even taste it, and it gives the pasta nice texture. I used ground turkey (I'm sure turkey sausage is much tastier), so I browned it and added Italian seasoning and hot pepper flakes. I put the turkey aside after browning, then sauteed fresh garlic and onions until soft and fragrant. Then I added four fresh chopped tomatoes and sauteed them with the cabbage, adding fresh spinach, and some white wine. You can add chicken broth or tomato sauce if you need it to be more saucy. I sauteed everything until the cabbage was tender crisp, then added the turkey and pasta in. I added a few tablespoons of parmesan cheese that rounded out this perfectly. The fresh spinach also gave the dish some nice color. Great recipe - thanks for giving me the inspiration for a new dish!
This was a very tasty dish - I must say I was a little curious what it would be like with the cabbage - AND it was DELISH :) I used hot turkey italian sausage for a little extra kick. A definite keeper. Thanks ms.muffet for another great recipe. Made for FALL 2008 PAC.
