Cabbage, Potato and Sausage Soup

"This soup is great for just any day of the week, for soup or lunch. Really easy to make, and sooo good! I like to make a batch of corn bread to have with this."

  • 1 lb cooked kielbasa or 1 lb Polish sausage, cut in half lengthwise, then sliced
  • 1 (16 ounce) package coleslaw mix
  • 2 (14 1/2 ounce) cans ready-to-serve chicken broth
  • 3 cups water
  • 1 teaspoon minced garlic
  • 14 teaspoon salt
  • 14 teaspoon ground black pepper
  • 2 cups mashed potato flakes

directions

  • In Dutch oven, combine all ingredients except mashed potato flakes; mix well. Bring to a boil over medium.
  • high heat, stirring occasionally.
  • Reduce heat to medium low; simmer 5 to 10 minutes or until cabbage is almost tender.
  • Remove Dutch oven from heat. Stir in mashed potato flakes.

Cooking is my passion, and I am slowly, but surely beginning to venture into the world of baking. To me, cooking is so much easier because baking is so much more exact. I love to make Italian and Mexican food the best, followed by Chinese and last, but by far the least, good old American food! How can you beat chicken fried steak, mashed potatoes and gravy?? I love to find several recipes and put my own spin on them and create a new recipe.
