I've tried many baked oatmeals, most dry and not so perfect. This is the absolute best in my opinion. This can be doubled easily, just bake for 35-40 minutes.
- 1 1⁄2 cups quick-cooking oatmeal
- 1⁄2 cup brown sugar
- 1⁄2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- 1⁄2 cup whole milk
- 1⁄4 cup butter, melted
- 1 egg, beaten
- In a mixing bowl, combine all ingredients. Spoon into a greased 9-inch-square baking pan. Bake at 350 degrees for 20-25 minutes. Serve warm with milk.
We loved this baked oatmeal. It is a nice change from a plain bowl of oatmeal. I used old-fashioned oats instead of quick-cooking, and I threw in a handful of chopped walnuts...yummy! Thank you for sharing this delicious recipe. **Made for Spring 2014 PAC**
