  • Pre heat oven to 375.
  • In medium bowl, mix first 4 ingredients.
  • Stir in finely chopped pecans, if using.
  • Break off walnut size pieces. Roll into balls.
  • Place on greased cookie sheet 2 inches apart.
  • Using the bottom of a glass moistened with softened butter from butter wrappers and dipped in sugar, SLIGHTLY flatten each ball.
  • Bake in 375 oven for 13-15 minutes or until edges are lightly golden.
  • Remove cookies to wire rack to cool.
  • Variation: Christmas Cookies, Add a drop or two of red or green food coloring. Omit the pecans if desired.
  • Variation: Roll balls in colored sugar crystals and then slightly flatten with glass. Omit pecans if desired.

I live in the beautiful Texas Hill Country between Austin and San Antonio. I have a wonderful husband, 3 grown and married girls, 2 grandsons, one granddaughter and another grandson coming Feb. 12th. I also have the only true loyal "child" still living with me....Daisy, our old, fat, loveable yellow Lab. I have a small business that I run only 6 months out of every year, 6 days a week, 9 hour per day. So, I only have time to cook the other 6 months of the year!!! I love to cook and only recently have I started baking. Now, my new passion is baking. However, we are constantly watching our weight, so, whatever I bake gets tasted by my husband and I and the rest goes to work with him. His employees love me.....most of the time. Looking forward to exploring this site and submitting recipes. Be assured that any recipe I submit will be a tried and true recipe.
