From Taste of Home, this is the best corn bread recipe I've tried. It's slightly sweet and very tender.
- 2⁄3 cup butter, softened
- 1 cup sugar
- 3 eggs
- 1 1⁄3 cups skim milk
- 2 1⁄3 cups flour
- 1 cup cornmeal
- 4 1⁄2 teaspoons baking powder
- 1 teaspoon salt
- Preheat oven to 400°F.
- Cream butter and sugar.
- Combine eggs and milk.
- Combine dry ingredients; add to creamed mixture alternately with egg mixture.
- Pour into greased 13x9-inch baking pan.
- Bake for 22-27 minutes or until a toothpick inserted near the center comes out clean.
This is the best corn bread I've ever had! I've been dying to find a really good recipe and have had a hard time. My 2 year old daughter devoured this, and she tends to be a light eater. This one's a keeper!
