This recipe is a take on my Granola Fudge Clusters (Small Batch) using white chocolate and more butterscotch chips as well as muesli in place of granola. In addition I added some coconut to the mix. I thought the clusters came out super yummy, so Im posting this here. I hope youll enjoy it, too. :)
The muesli I used included some nice red goji berries, so these looked quite festive. Feel free to experiment with different mueslis.
3/4cupmuesli
(use your favourite, mine included different flakes, amaranth, poppy seeds and goji berries)
1/4cup
desiccated coconut
(unsweetened)
Directions:

In a microwave safe bowl combine white chocolate chips and butterscotch chips. Melt them and stir until smooth (in my microwave it took 1 1/2 minutes on high). You can also do this over a warm water bath.

Stir in muesli and coconut until everything is well coated. If you find that the mixture is too wet, simply add some more muesli by the tbs until it reaches a nice thick consistency.

Drop by tabelspoonfuls onto a paper-lined baking sheet. Allow to dry for about 1 1/2 hours or until set (this might depend on the weather).
Wonderfully tasty little bites these are, & definitely something I'll be making again!
