Butterscotch Peanut Fudge

Taken from Taste of Home 2009, amasingly easy and just as tasty! All you need are some simple ingerdients and a microwave! (i used a package of chocolate peeps instead of the mini marshmallows once and it came out just as great!)

  1. comine milk, butterscotch chips and marshmallows in microwave-safe bowl.
  2. microwave, uncovered at 80% power for 3 minutes, stirring approximately every 30-45 seconds so marshmallows don't burn.
  3. stir in peanut butter and vanilla.
  4. fold in peanuts.
  5. pour mixture into 11 x 7 inch pan coated with cooking spray.
  6. cover and refrigerate for 2 hours**.
  7. cut into pieces and enjoy!
  8. serving number depends on size of fudge pieces cut*.
