Directions

  1. Melt butter.
  2. Add sugar and allow to brown.
  3. Gradually add water.
  4. Beat egg yolks.
  5. Add a small of measured milk and flour.
  6. Stir until smooth.
  7. Add rest of milk and salt. Mix.
  8. Pour this slowly into the sugar mix and cook until thick.
  9. Cool.

Used this in a butterscotch pie for my butterscotch fiend, Dh. He says twenty stars. It's a bit thin for a pie filling and I'll use a couple more T flour or cornstarch next time. As written, it's perfect pudding consistency. I can take or leave butterscotch and this was really good, not overly sweet and not too oily. I loved the fact that it has a limited list of ingredients and it's quick and easy to make.
