Butterscotch Almond Bars

This is a really good chewy, nutty bar with a bit of chocolate drizzled on top. I like it cut in very small squares on a tray of sweets.

  1. Preheat oven to 350 degrees.
  2. Combine flour and baking powder.
  3. Melt butter and pour into mixing bowl. Blend in the sugar, then beat in the eggs and vanilla.
  4. Stir in the flour and baking powder.
  5. Spread in a greased 13 x 9 inch pan. Bake at 350 degrees for 20 minutes, then cool.
  6. For the topping melt the butter, add the remaining ingredients (except the almonds and chocolate) and boil for 4 minutes, stirring constantly.
  7. Take off the heat and stir in the almonds.
  8. Pour over the baked base.
  9. Melt the chocolate and drizzle over. Let cool completely.

I have been making these bars for over 20 years but my instructions also have me bake the cake again for 10 minutes after you put on the topping. These are one of the most requested goodies when I make up my Christmas trays.

These are great!! I loved the almond topping on the very buttery cake. My cake base took more than 20 minutes to cook but it was probably my oven (I need to recalibrate it). These bars are very rich so your suggestion of serving them in small squares is a good idea. They'll be a pretty and tasty addition to my holiday cookie tray. Thanks Cookin-jo! Update - Just had to tell you I took these to work and my co-workers went nuts over them!! One gentleman carried them around the building exclaiming, "You've got to taste these!" Bravo Cookin-jo!!
