Wow! This was really good. I used a carnival squash. The squash flavor really came out in this dish. Will make again. Thanks for the recipe.

Yummmm meeeeee. I did tweak it a little: used dry-fried pinenuts which are a lovely combo with butternut squash. I also used an 8oz packet of diced bacon lardons (so a lot more bacon than suggested!) and therefore didn't use any oil to fry off the bacon. Then I steamed the butternut squash in the microwave instead of frying it. Cutting it down to ONE pan to wash up--- perfect and delish!

Excellent! Flavorful and easy. My whole family loved it. I used pecans and it was great!
