Here's a nice way to cook old squirrels which are too tough for frying.

  1. Preheat oven to 375 degrees.
  2. Wash squirrels well inside and out with warm water.
  3. Cut into serving pieces.
  4. Put squirrel into a kettle, add water to cover 2 inches and add salt, heat to boiling.
  5. Reduce heat, cover tightly and simmer until very tender, 1-2 hours+ depending on age.
  6. The meat should be almost ready to fall off the bones.
  7. Remove squirrel and let drain.
  8. When cooled cut meat from bones.
  9. Mix together vegetables, soup and squirrel meat in a casserole dish.
  10. Mix buttermilk, margine and flour together and pour over top.
  11. Bake at 375 degrees for 40-45 minutes.

I didn't have squirrel on hand so I used chicken per another reviewers suggestion. (used to love the fried squirrel my grandma used to make)I thought this dish was just terrific. I hope to have squirrel next time and invite Lalaloob over for this dish with some chitlins' and pickled pork feet. OMG.
