I made these for the Best of Tag Game and served them to a full house of visiting relatives and college students home on Spring Break. To say they were a huge hit is an understatement. Delicious and different, they are a keeper and will be in my Best Of cookbook for this year!!!
Made these for 4 of us (overnight company) & they were a big hit, especially when served with some homemade pumpkin butter & cranberry syrup! Yet another recipe I'd love to make later this month & again in December! Couldn't be more satisfying ~ Many thanks for sharing the recipe! [Made & reviewed in Make My Recipe tag]
To get crisp waffles, add 1/3 C Cream of Wheat (3 min. cook time) to dry ingredients.
The perfect Autumn breakfast! The pumpkin is subtle but present, with the spices in perfect balance. I used 1/3 whole wheat pastry flour and will probably increase to half. I made 2/3 batch and still got 15 waffles - maybe the 12 is for Belgian Waffles??? DH had his with Brown Sugar Splenda Cream Syrup and I had mine with Trader Joe's Cranberry Apple Butter and little whipped cream - a heavenly combination. These don't get very crisp, but the taste is so wonderful it doesn't matter.
Thanks Boomette, this one will be a weekend regular! Made for PRMRT
