These are great pancakes: Light and fluffy, with a subtle tang from the buttermilk.

  1. Whisk together flour, sugar, baking soda, egg and 1 cup buttermilk.
  2. Whisk until smooth.
  3. Heat a griddle over moderate heat until hot.
  4. Brush lightly with vegetable oil.
  5. Using a ¼ cup measure filled halfway, make 6 pancakes.
  6. Serve with butter and warmed maple syrup or honey.

I made these for breakfast and they were really good. The pancakes were nice and thick - but still fluffy. My husband said that he could sit at the table and eat these all day. That's a major compliment coming from him. Thanks for the recipe!
