ingredients
- 177.44 ml all-purpose flour
- 59.14 ml cornmeal
- 4.92 ml baking soda
- 2.46 ml salt
- 236.59 ml buttermilk
- 14.79 ml canola oil or 14.79 ml melted butter
- 2 egg whites (whole eggs separated work well too)
- 14.79 ml vanilla (optional)
- 118.29 ml wheat germ (optional) or 118.29 ml ground flax seeds (optional)
directions
- Combine the first 4 (four) ingredients (if you are using wheat germ or flax seed combine with dry ingredients) in a large mixing bowl; set aside. Stir buttermilk and oil together add vanilla as well; set aside. Blend egg whites in a dry mixing bowl until stiff peaks form; set aside. Mix buttermilk mixture into flour mixture; blend until smooth. Gradually fold in egg whites; pour by cupfuls onto a hot, greased waffle iron. Heat according to waffle iron manufacturer's instructions.

Fantastic waffles! I used the suggestions given. I ended up using 1/2 cup ground flax meal, 1 T. vanilla (great addition) and 2 whole eggs (I forgot to separate them and whip the whites - but it seemed just fine!). I loved the taste and texture the cormeal added to these waffles. I also loved that I could hide a really healthy ingredient, flax, and it was still enjoyed by my kids! Kudos to you, kitty!

I can't say enough good things about this waffle I think it's one of the best yet I have made, I used the wheat germ and that is what gave these so much flavor, I also added in 1 tablespoon sugar, this will be one I will make again, thanks for posting this great waffle recipe Kitty, this was make for KK's Chef Pick Forum game

Tough/impossible to get buttermilk in Mexico. I've adapted the recipe on the side of Saco Buttermilk Blend with some tweaks. I use 2/3 cup whole wheat flour, 1/3 cup of cornmeal, and delete the sugar called for. Since I typically make the recipe as waffles, I add an extra egg. I use a hand electric mixer and beat it quite well. The waffles freeze well and come to life in the toaster!
