Buttermilk Cocoa Cake

  • In a large saucepan, combine 1/4 cup cocoa and water until smooth.
  • Add 1/2 cup butter. Bring just to a boil.
  • Remove from the heat.
  • In a large mixing bowl, combine the flour, sugar and baking soda; add cocoa mixture.
  • Combine eggs, oil and 1/2 cup buttermilk; beat until smooth.
  • Pour into a greased 13x9x2 in pan.
  • Bake at 350 for 30-35 min or until a toothpick inserted near the centre comes out clean.
  • For frosting: In a large saucepan, bring 1/4 cup cocoa, 1/2 cup butter and 1/2 cup buttermilk to a boil.
  • Remove from the heat.
  • Whisk in the confectioner's sugar and vanilla.
  • Spread over warm cake.
  • Sprinkle with pecans.
  • Cool on a wire rack.
