- 1⁄4 cup cocoa
- 1 cup water
- 1⁄2 cup butter, cubed
- 2 cups all-purpose flour
- 2 cups sugar
- 1 teaspoon baking soda
- 2 eggs, lightly beaten
- 1⁄2 cup vegetable oil
- 1⁄2 cup buttermilk
- 1⁄4 cup cocoa
- 1⁄2 cup butter, cubed
- 1⁄2 cup buttermilk
- 3 3⁄4 cups confectioners' sugar
- 1 teaspoon vanilla
- 1⁄2 cup pecans, chopped (optional)
directions
- In a large saucepan, combine 1/4 cup cocoa and water until smooth.
- Add 1/2 cup butter. Bring just to a boil.
- Remove from the heat.
- In a large mixing bowl, combine the flour, sugar and baking soda; add cocoa mixture.
- Combine eggs, oil and 1/2 cup buttermilk; beat until smooth.
- Pour into a greased 13x9x2 in pan.
- Bake at 350 for 30-35 min or until a toothpick inserted near the centre comes out clean.
- For frosting: In a large saucepan, bring 1/4 cup cocoa, 1/2 cup butter and 1/2 cup buttermilk to a boil.
- Remove from the heat.
- Whisk in the confectioner's sugar and vanilla.
- Spread over warm cake.
- Sprinkle with pecans.
- Cool on a wire rack.
