Buttermilk Cocoa Cake

  1. In a large saucepan, combine 1/4 cup cocoa and water until smooth.
  2. Add 1/2 cup butter. Bring just to a boil.
  3. Remove from the heat.
  4. In a large mixing bowl, combine the flour, sugar and baking soda; add cocoa mixture.
  5. Combine eggs, oil and 1/2 cup buttermilk; beat until smooth.
  6. Pour into a greased 13x9x2 in pan.
  7. Bake at 350 for 30-35 min or until a toothpick inserted near the centre comes out clean.
  8. For frosting: In a large saucepan, bring 1/4 cup cocoa, 1/2 cup butter and 1/2 cup buttermilk to a boil.
  9. Remove from the heat.
  10. Whisk in the confectioner's sugar and vanilla.
  11. Spread over warm cake.
  12. Sprinkle with pecans.
  13. Cool on a wire rack.
