Very tasty and easy! They have a nice crispy outside and moist, chewy center. I loved the hint of lemon with the cinnamon! The only change I made was using Fiber One instead of All-Bran cereal. Made for Spring 2008 PAC.

Ingredients Nutrition


  1. Preheat oven to 400 F (200 C).
  2. Combine buttermilk with bran. Set aside.
  3. Mix together eggs, melted butter and vanilla.
  4. Stir into buttermilk mixture.
  5. Stir sugar and lemon rind into remaining dry ingredients.
  6. Add buttermilk mixture and stir just until blended.
  7. Fill greased muffin tins 3/4 full.
  8. Bake 20 to 25 minutes.
