Buttermilk Bran Muffins

These muffins are very good and also healthy. They have no sugar and lots of fiber. I also have made them using a no gluten flour and they are just as good.

  1. Combine dry ingredients( first 7 items). Mix together in a bowl(egg, buttermilk, molasses, buttermilk, and bananas. Add the wet ingredients to dry ones and stir only until all ingredients are moist. Fill greased muffins tins 3/4 full. Bake at 350 for 25 minutes.

Just a note of caution: Bran as most people think of it is not suitable for those on a gluten free diet, since it comes from wheat. Rice bran, however, is okay. Sounds like a great recipe!
