Buttermilk and Chive Mashed Potatoes

"A recipe from Ricardo that I did yesterday. These mashed potatoes are creamy and delicious. I used more chives than requested. And instead of using buttermilk, I made my own with milk and adding vinegar. That was perfect."

  • In a saucepan, cook potatoes in salted boiling water until tender, about 15 minutes. Drain.
  • With a mash potatoes, mash the potatoes with the butter. Then with an electric mixer, reduce the mixture to a puree with the buttermilk and chive. Add salt and pepper.

  1. These were so good! The buttermilk along with the chives gave the potatoes so much flavor. It's such a simple substitution but it makes all the difference in the world. This is the only way I'll be making my mashed potatoes from now on.

  5. Mashed potatoes are popular at our house, but I've never made them with buttermilk. What a fantastic option. I had a few extra potatoes, so slightly upped all the other ingredients. Used thin-skinned potatoes, which I never bother to peel, and mashed it all by hand. Absolutely scrumptious. The family attacked before I had time to get a pic. Maybe next time. :) Thanks for posting.

Tweaks

  1. Excellent change from plain mashed spuds. Had some buttermilk in the fridge, so why not try these? I just used thinly sliced scallion tops instead of the chives. Didn't use a mixer, just hand mashed like crazy (good stress reliever) and they came out fine.
