  • Add buttermilk and milk to a clean glass quart jar. Cover.
  • Let sit in a warm place for about 14 hours; the time will vary depending on how warm your house is and it can take as long as 24 hours.
  • Check every few hours after the first 12 - 14. When buttermilk reaches a nice thick consistency, place in fridge to cool down and store.
  • From this culture you can continue to make your own continuous supply of buttermilk.

  1. I love using buttermilk when cooking and baking. I decided to try this with skim milk powder. It didn't work at first, the problem was that the house was a little extra cool. I put it in the oven on the bread proof setting (100 F). It got so nice and thick with that lovely sour smell. Thanks so much! I read somewhere that you can use buttermilk to culture your own sourcream too, I will have to try that as well! Thanks so much, I hope to never have to buy buttermilk again!
     
  2. This works great!! I was nervous at first, so I only used it for cooking. But we ran out of ranch dressing and I decided to test it out "raw". It was delicious and no one has gotten sick in the last couple of months since I've been doing this. The fresh buttermilk smell is so wonderful! I have saved a lot of money doing this.   3. This works!! After 24 hours it still didn't seem to be doing too much, but after 28+ hours, it was nice and thick. Our house is fairly cool. The taste is great, and it really will be a money saver for me. I like buttermilk on my cereal and now I can have it any time, since I can just divert part of a $2.50 gallon of milk to make a quart of buttermilk rather than spending almost that same money on just a quart of buttermilk.
