Buttered Beets (Rachael Ray Recipe)

A speedy and popular UK side dish per Rachael Ray. Found on Food Network website. One of the reviewers suggested also browning off some thinly sliced onion with the butter, then adding the parsley and beets.


  1. In a medium skillet over moderate heat melt 2 tablespoons butter, add parsley and sliced beets.
  2. Warm through, season with salt and serve.

I don't particularly like canned beets but this made them taste good. I used sweet (unsalted) butter, sea salt plus the rest. Made for Veggie Swap 32 ~ March 2011.

YUM! We fix beets this way all the time. FABULOUS! I do add some salt and pepper to the mix however. My Dad and I are the only beet eaters in the family, and he thinks these are just great.
