If you are looking for a butter alternative that tastes good and doesn't' cost a fortune, this is for YOU. It is made with coconut oil as a main ingredient, so you can get the health properties of this tropical oil. However, if you don't like, don't use, or can't find coconut, this can be made with any food grade oil.
- Whip butter in bowl (hand mixer is best).
- Whip in buttermilk and oil, alternating, until incorporated in butter.
- Chill and serve.
Compared to butter, coconut oil (virgin, unprocessed) has been found to have a myriad of health benefits. Grumblebee may want to do a little reading before basing her opinion solely on the fact it's classified as a "saturated" fat.
Completely agree with fluffitude! Coconut has so many benefits! Sometimes in this life, you need to weigh the good and the bad, and with coconut oil there is so much good!
I am not sure why anyone would make this normally. coconut oil's fat is almost entirely the saturated kind... it has even more saturated fat than butter! while this recipe is something one could use in a pinch to stretch their regular butter, i would not use this normally or outside of an "emergency" (where i'm running low on butter)
