These crisp shortbread-like cookies are wonderful with a cup of coffee.
- 3⁄4 cup butter (softened)
- 3 1⁄2 ounces butterscotch pudding mix
- 1 1⁄4 cups all-purpose flour
- 1⁄2 cup pecans (chopped)
- Ceam butter and pudding mix. Gradually beat in flour. FOld in pecans. Roll into 1 1/2" balls.
- Place 2" apart on greased baking sheets; flatten to 1/2" with greased glass.
- Bake at 375 degrees for 10-13 minutes or until light golden brown.
- Remove to wire racks.
