Definitely delicious. I was concerned that the vinegar would be too strong, but the key is to allow the rice to sit for several minutes to really absorb the flavors of the cilantro, lime and vinegar. The result is a very unique, but flavorful rice that can be served alongside your favorite meat dish. The rice is not overpowering, but adds a nice tangy surprise to the meal. Made for Fall PAC, 2012.
Wow, this really adds some zip to the meal. I was leery of the amount of vinegar, but it was perfect. Great with a roasted game hen. Made for Fall 2012 PAC game.

This was really good! I made it to accompany Crock Pot Cream Cheese and Black Bean Chicken (Crock-Pot Chicken With Black Beans & Cream Cheese). It was so good! I loved the mix of flavors. I followed recipe as written. Thanks!
This was good and flavorful for rice. I got a bit confused with the directions though. I measured out 2 cups of rice after it was cooked but then realized a whole bunch of cilantro and stick of butter would be way overkill for that amount of rice. I assume you meant 2 cups raw rice, then cook it. I ended up quartering all of the other ingredients to compensate so I'm not sure if the ratio was right.
Delicious! Hubby wanted to know what was giving it that wonderful tangy flavor...we loved the lime and the cilantro in this creamy rice dish...of course the butter made it even more yummy! I served it with Spicy Peanut-Coconut Shrimp and some steamed broccoli...it made a wonderful meal...it's a keeper...thanks for posting it! =)
In general, I'm not a big rice fan......but this recipe has converted me. I cut this down to one serving, and am sooo sorry I did. Loved it! Made for Best of 2012 tag game.
The cilantro is so tasty. I heard on the news my mayor's begging for National Guard intervention and I think they're going to be rioting in the streets in the wake of my town's cilantro shortage.
When I saw the photos of this recipe on PAC I knew I had to try it. We love lime, cilantro and butter so it had to be a winner and I must say it IS. Ease of prep is a bonus. Like the others I was worried about the vinager and it didn't say what kind so I just used regular apple vinager and it worked fine. Followed the directions exactly and wouldn't change a thing. Has a nice zing for a great added flavor to plain white rice. Made this to serve with Chicken Tikka Masala and homemade Naan bread and it was perfect.
