I created this after a trip to the farm stand with my 2 y/o son. A nice light lunch or first course salad.
- 1 head butter lettuce
- 2 plums, pitted & sliced
- 1 cup blackberry
- 1⁄2 cup pecans, toasted
- 1⁄4 cup blue cheese, crumbled
- 1 lemon, juice & zest of
- 3 tablespoons honey
- 1 teaspoon ground ginger
- Combine honey, lemon juice, lemon zest & ginger.
- Microwave on high for 10 seconds to melt honey a bit.
- Shake to combine.
- Arrange lettuce leaves, fruit, nuts & cheese.
- Drizzle with dressing.
I used vegetables and fruits from either our CSA box or the local farmer's market including organic butter lettuce. Blueberries replaced blackberries because my secret blackberry batch down the road isn't producing for another week or so. I loved the dressing. The powdered ginger was replaced with a small amount of freshly grated ginger (about 1/2 teaspoon) and used local wildflower honey. I am a big fan of fresh, seasonal salad and this one is a good example. Thank you for posting the recipe!
