  • 1 cup light sour cream
  • 2 tablespoons Lipton Onion Soup Mix
  • 1 cup breadcrumbs
  • 2 tablespoons grated parmesan cheese
  • 1 teaspoon dried parsley
  • 12 teaspoon paprika
  • 2 lbs fish fillets, about 1 1/2 inches thick,cut into 6 pieces (I use flounder or catfish)
  • 12 cup oil

directions

  • Preheat oven to 500-degrees F.
  • Grease 9x12" baking dish.
  • Combine sour cream and soup mix in small bowl.
  • Mix breadcrumbs, cheese, parsley and paprika in small dish.
  • Dip fish in sour cream mixture and then in bread crumb mixture.
  • Arrange fish in single layer in baking dish.
  • Pour oil over top of all.
  • Bake 8-10 minutes; turn and continue baking until done, about 5-10 more minutes.

I used flounder in this recipe and I made a couple of substitutions...I used cereal crumbs instead of the bread crumbs and since my family isn't too keen on onions, and I only had Italian dressing mix in the house, that's what I used. My topping fell off the fish too when I flipped it, but my family really enjoyed it and the dish was wiped clean! My 8-yr. old said, "This is good fish," and my husband who usually uses ketchup on his fish, didn't use anything because of the great flavor! I'd make this again in a snap...easy and delicious!

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
