Burrito Joe's

"I invented this when I wanted to make something with the ingredients that I had, but also wanted something with a depth of flavors. DH thought it was ok and could use more cheese. Oh, well. He doesn't like sloppy joe's at all. But, I thought it was very good."

  • 12 lb hot Italian sausage
  • 12 lb extra lean ground beef
  • 12 cup salsa
  • 12 teaspoon garlic salt
  • 12 teaspoon onion salt
  • 12 teaspoon dried onion, minced
  • 12 teaspoon parsley
  • 12 teaspoon oregano
  • 12 teaspoon chili powder
  • 1 large tomatoes, diced
  • 1 12 ounces dry burrito mix (I used Lawry's)
  • 8 -10 hot dog buns, split
  • 8 -10 slices American cheese

directions

  • In a large saucepan or Dutch oven over medium heat, cook sausage and ground beef until no longer pink.
  • Add seasonings, tomatoes, salsa.
  • Bring to a boil, lower heat and simmer for 30 minutes.
  • Add Burrito seasoning and let cook 10 more minutes.
  • Layer cheese inside hot dog rolls.
  • Spoon about 1/2 cup onto each roll.
  • Serve.

I'm a network administrator and also teach step aerobics. My hobby during warmer weather is my vegetable garden. I love to cook and make up interesting recipes. I've recently been put on a restricted diet. No dairy, gluten, wheat, oats, sugar. So, I'm looking for ways to spice up my meals. I cook non-restricted meals often as my husband can eat whatever he wants and I love to cook for him. But, once a week, I make him something "interesting" and healthy and he has to at least try it. So far, it's been a big hit.
