For the Dressing
- 59.14 ml olive oil
- 59.14 ml fresh lemon juice
- 118.29 118.29 ml fresh dill or 118.29 ml of fresh mint
- 29.58 ml plain low-fat yogurt
- 4.92 ml lemon zest, grated and packed
- 4.92 ml salt
- 1.23 ml harissa (optional) or 0.25 ml cayenne (optional)

For the Salad
- 425.24 g can chickpeas, drained and rinsed
- 591.47 591.47 ml cooked wheat berries or 591.47 ml cooked spelt
- 354.88 ml cucumbers, diced and seeded
- 236.59 236.59 ml plum tomatoes, finely diced or 78.78 ml pickled turnip, diced
- 59.14 ml scallion top, thinly sliced (green onions)
directions
- In a food processor or blender, blend the oil, lemon juice, parsley, yogurt, lemon zest, salt, and harissa (if using).
- In a large serving bowl, combine the chickpeas, bulgur, cucumbers, radishes, and scallion greens.
- Add the dressing and toss to coat.
- Let the salad sit for 5 minutes before serving.

This salad is light and refreshing! I did make a few changes to suit our tastes better. I used 1/2 cup of cilantro instead of parsley and 2 T of low-fat sour cream in place of the yogurt. I would've liked the bulgur to be less crunchy next time, so need to figure out how to cook it. On my bulgur package, it says just to soak in water for 30 minutes. Thanks, Engrossed!
