The idea for this recipe came about because I was sick of spending so much money on healthy bars to use during long bike rides. When I read the ingredients of some of these, I realized most of them are just healthy cookies and I went to work on creating my own. - 1⁄2 cup walnut oil
- 1 egg
- 1⁄4 cup agave syrup or 1⁄4 cup brown rice syrup
- 1⁄2 cup brown sugar
- 1 tablespoon vanilla
- 2 cups oats
- 1 1⁄2 cups white whole wheat flour (or 1 cup white and 1/2 cup wheat flour)
- 1 teaspoon baking soda
- 3⁄4 teaspoon salt
- 1 cup M&M's (your choice) or 1 cup raisins (your choice) or 1 cup shredded coconut (your choice) or 1 cup nuts (your choice) or 1 cup chocolate chips (your choice)
- Stir all wet ingredients together. Add dry ingredients and mix well. Stir in one cup of your ingredient of choice. Drop by the spoonful onto baking pan. Bake at 350 for 9-13 minutes.
I made this recipe for my kids, I added some shredded zucchini, nuts and seed and made it will only whole wheat flour and it was fantastic. All our friends thought we bought them at a specialty cookie store, now I make them quite big and give them to the kids as an on the go breakfast cookie! Thanks so much for posting!
