The idea for this recipe came about because I was sick of spending so much money on healthy bars to use during long bike rides. When I read the ingredients of some of these, I realized most of them are just healthy cookies and I went to work on creating my own. The original recipe came from:

  1. Stir all wet ingredients together. Add dry ingredients and mix well. Stir in one cup of your ingredient of choice. Drop by the spoonful onto baking pan. Bake at 350 for 9-13 minutes.

I made this recipe for my kids, I added some shredded zucchini, nuts and seed and made it will only whole wheat flour and it was fantastic. All our friends thought we bought them at a specialty cookie store, now I make them quite big and give them to the kids as an on the go breakfast cookie! Thanks so much for posting!
