      I had to use chicken breasts and bread instead of the thighs and buns but it still turned out FANTASTIC!!! Thanks :)

      Yummy!! I made this for myself as Hubby and Little Miss were having a steak burger and I don't eat red meat. I made two changes, I used Chicken Tenderloins instead of thighs and used burger buns instead of dinner rolls. I really enjoyed the flavours of the cajun seasoned chicken with the lemony yoghurt sauce. Everything tasted yummy, Little Miss (DD) even added the "sauce bit" on her steak burger. Thanks PaulaG for posting your version of this recipe.

      Welllll....I took a few small liberties...I couldn't find small rolls, so I didn't cut halve the thighs. i used a total of 10 thighs & there were 2 leftover when the 4 of us were finished. :o YUMMMM!!! wiped out my supply of Tabasco, too. :o We loved these - even my typically picky daugher went back for 2nds & had one of the leftovers for lunch the next day. :o The yogurt topping was excellent (i used scallions instead of chives because my chive plant died? disappeared.) And i cooked the chicken in a cast iron skillet because I haven't purchased my grill for Father's Day, yet. ;) Thank you, Paula, for another fabulous recipe! Made for 5/10 Aussie Swap.
