Roll up your sleeves and grab a bunch of napkins. This is messy but oh so yummy! Get your spicy Buffalo kick in a healthier and fun way! Serve for lunch or dinner.   1. Heat oil in a saute pan over medium heat.
  2. Add onions and carrots. Cook until onions become translucent and carrots are softening, about 5-6 minutes.
  3. Add the ground chicken, and cook until done, sprinkle in the salt & pepper & dry seasonings, breaking up the meat as it cooks.
  4. Stir in the tomato sauce and hot sauce; simmer for 20-30 minutes.
  5. Add a lettuce leaf to your roll, then spoon on the chicken mixture. Top with blue cheese dressing or crumbles for serving.
  6. Serve with oven fries or onion rings. YUM!
