Buffalo Chicken Salad

"I like to serve this on Ritz Crackers but also makes a good Chicken Salad Melt Sandwich."

  • 3 large bone-in chicken breast halves (Could use left over chicken or rotisserie chicken, as well)
  • salt
  • pepper
  • 29.58 ml garlic, minced
  • 226.79 g cream cheese, softened
  • 118.29 ml ranch dressing
  • 85.04 g hot sauce (Texas Pete seems to give the best flavor, but this is up to you)
  • 2 stalk celery, chopped (I run mine through the food processor)

  • Salt and pepper your chicken breasts. Boil with 2 tablespoons garlic for 25-30 minutes. Drain and allow to cool. Once cool, pull chicken off the bones and into bite-size pieces.
  • Mix softened cream cheese, ranch dressing, and hot sauce with hand mixer -- this breaks the cream cheese up the best, if you mix without a mixer it will be chunky.
  • Fold chicken and celery into cream cheese mixture and enjoy!

  1. With garlic in the recipe, I opted to use lemon pepper for seasoning rather than the usual S&P, & I also was very stingy with the hot sauce (personal preference only)! Still what I made was a very tasty salad & half of which was shared, along with another salad I'd made, with a neighbor couple! Thanks for posting this great recipe!   2. Oh, boy, is this addicting! Like *Tink*'s daughter, had to stop myself from eating it with a spoon. This will be what I take to my next hospice meeting. I didn't have Texas Pete hot sauce, so subbed with what I had on hand. Adding the full 3 oz of hot sauce makes this dish not for the faint of heart!   3. OMG! I knew that DH & DS (17) would love this, but I definitely didn't expect my toddler to! She's eating this stuff with a spoon! I served it up on some Roasted Garlic flavored Triscuit crackers & it's so addicting! Unfortunately, DD probably only can eat it because I didn't have the full 3 oz of hot sauce to put in. Somehow I only had about an ounce. So I subbed by putting in about 15 drops of Tabasco, which isn't the same exact flavor, but enough heat to offset the ranch & cream cheese & let us know that this is a recipe worth making again when we have a new bottle of hot sauce.
