Quick and fun meal. Everyone enjoyed it. The tomatoes and onions add a nice fresh, crispiness to the dish. However, the cheese sauce definitely needs to be doubled. I only made a few changes. I didn't cook the cooked chicken in the sauce. I made the sauce, then add the chicken. I left out the butter altogether, the sauce would have been greasy IMO. And I didn't use seasoning salt due to allergies.

  • 1 cup chicken broth
  • 2 cups whole rotisserie chicken, cut into 1-inch pieces
  • 1 teaspoon seasoning salt
  • 12 cup hot sauce
  • 14 cup heavy cream
  • 14 cup butter
  • 12 cup shredded Mexican blend cheese
  • 1 (9 3/4 ounce) bagoriginal Fritos corn chips
  • 3 12 tablespoons ranch dressing
  • 14 cup tomatoes, diced (1/4 inch pieces)
  • 14 cup green onion, chopped (1/4 inch pieces)

Directions

  1. Add broth and chicken to sauté pan, then season with salt.
  2. Heat until broth is reduced by a little more than half.
  3. Add hot sauce and cream, then let reduce.
  4. Add butter and half the cheese, and incorporate.
  5. Empty a bag of Original Fritos on a platter and top with the warm chicken mixture.
  6. Top with the remaining cheese, then drizzle with ranch dressing, then tomatoes, and green onions.
